Visualize this: an Australian day that refuses to go below 30°C, a driveway that is so hot you have to wear shoes to get your post, a pool that serves more as a spa than a refreshing lagoon and an electricity bill that is twice the price of the previous month because without an air conditioner you would shrivel like a sultana whilst watching your favourite episode of Great British Bake Off.
If you are living in Australia, particularly Queensland, New South Wales and South Australia, you will know what I am talking about, so when it comes to providing dinner every night regardless of the weather you are a bit stuck (A cold salad just wont do!).

To help I have compiled a really simple, fail-safe recipe that will make sure you spend as little time as possible near a hot plate but is also delicious and hearty. This is one of my staples and it fills up my teenagers too!
SUMMER QUINOA SALAD
Preparation: 10 minutes > Boiling Time: 3-5 minutes > Ready in: 40 minutes Serves 3-4
Ingredients
1 Cup Quinoa
2 Cups Boiling Water
1/2 Capsicum, diced
1/2 Onion, diced
1/2 Chili, diced
1 Carrot, diced
1 Tomato, diced
1 Cucumber, diced
50g Walnuts, roughly chopped
1 cup Fresh Spinach, washed
100g Feta Cheese
Bunch of Watercress to dress
Dressing
3 Tbsp Olive Oil
1 Tbsp White Wine Vinegar
Pinch of Salt
Crack of Pepper
Method
1. Place the Quinoa and boiling water into a pot and boil for 3-5 minutes.
2. Take the pot off and put into the EasyOven for 40 minutes.
3. Place the cooked Quinoa into a serving bowl and mix in the capsicum, onion, chili, carrot, walnuts, cucumber, spinach and feta cheese.
4. Add the dressing and watercress for serving.
5. Enjoy!
